Ultrasonic rubber/cake cutter is composed of digital generator, ultrasonic transducer with cover and Titanium blade. Instead of using traditional blade cutting, ultrasonic rubber cutter has its advantages of smooth, reliable cutting, accurate trimming, no deformation, no raising, spinning, wrinkling etc.

With regard to cutting materials, such as bread, rye bread and cake, a lot of methods can be applied. There are four major components in the typical ultrasonic food cutting system. They are the power supply, the transducer, the booster and the cutting tool. We not only focus on cutting in food processing through comparing the principle of ultrasonic cutting with conventional cutting, but also address practical applications of ultrasonic cutting in food processing through the performance of ultrasonic cutting of bread, rye bread and cake. The results show that ultrasonic cutting can be applied to cut thin slice of food, which the conventional cutting cannot do. Moreover, in order to extend practical applications of ultrasonic cutting in food processing, a novel kinematic mechanism is proposed to satisfy motions of ultrasonic cutting equipment.

Ultrasonic rubber cutting principle is through the ultrasonic generator 50 / 60Hz current into 20,30 or 40kHz power. The converted high frequency electrical energy is again converted into mechanical vibrations of the same frequency by means of transducers, which are then transmitted to the cutter through a set of amplitude modulator means which can vary the amplitude. The cutter transmits the received vibration energy to the cutting surface of the workpiece to be cut, in which the vibration energy is cut by activating the molecular energy of the rubber and opening the molecular chain.
