Ultrasonic food cutting technology uses high-frequency vibration (usually 20-40kHz) to achieve precise cutting of materials. The system mainly consists of an ultrasonic generator, a transducer, a horn and a cutting blade. When the high-frequency electrical signal is converted into mechanical vibration by the transducer, the cutting blade vibrates at a high speed with a microscopic amplitude (about 10-100 microns), generating shear force to achieve cutting.
